These are my go to when making muffins, so fresh and tasty; plus the health benefits of blueberries can't be beat!
Ingredients
2C flour of choice
2 teaspoons baking powder
Pinch of sea salt
1/2C grass fed butter OR coconut oil
3/4C coconut sugar
2 eggs
1/2C milk of choice
1/2C wild blueberries
1 tsp vanilla
2 tbsp coconut sugar for topping
Instructions
1. Preheat oven to 375F
2. In a medium bowl, whisk together flour, baking powder and salt
3. In another bowl, beat together egg, butter, milk and sugar; until fully combined
5. Add in the dry mixture and combine well (It will be thick)
6. Fold in blueberries
7. Scoop batter into lined muffin tins
8. Sprinkle with sugar on top (They get crispy; highly recommend)
9. Bake for 30 minutes
10. Let them cool and enjoy!
