Creamy, rich, and comforting. This soup is perfect for a soup and sandwich kind of night. I am obsessed.
Ingredients
1 head of cauliflower
1 red onion
3 cloves of garlic
3 medium potatoes
1/4C olive oil
3C broth
2 tsp sea salt
1 tsp garlic powder
2 tbsp nutritional yeast (parmesan works too!)
Instructions
In a large pot (I love this amazon one!) add olive oil, garlic and onion; saute for 5 minutes
Add the remaining ingredients (besides the nutritional yeast) and simmer for 30 minutes
Blend well with the nutritional yeast and enjoy!
