Chicken Balsamic Stew

It's that time of year again... the air is crisp and you can always count on me making my balsamic chicken stew!!

HERE is the pot I use for stews


8 chicken thighs

4 large carrots (peeled and chopped)

2 cups spinach

1 cup sliced mushrooms

1 chopped medium sweet potato

1 large onion (chopped)

1 clove garlic (minced)

1/3C balsamic vinegar

1/2C red wine

3 tsp salt

Throw it all in a pot, let it simmer for 40-45 minutes, shred the chicken to the size you would like and enjoy!!
