Cranberry Orange White Chocolate Shortbread

If you can't tell, I have been obsessed with cranberry and orange lately... It is just an amazing combo, what can I say :)


  • 1C Butter (softened)

  • ½C Coconut sugar (any sugar works!)

  • 1 teaspoon vanilla extract

  • 1 tablespoon orange zest (zest from 2 oranges)

  • ¼ teaspoon salt

  • 2C flour (I used 1:1 gluten free baking flour)

  • ½ cup dried cranberries, chopped

  • 1/2C white Chocolate Chips


  1. Cream the butter and sugar together using a mixer.

  2. Add vanilla, orange zest, and salt and beat until incorporated. Add flour and cranberries and white chocolate chips beat until mixture forms into a dough.

  3. Roll dough into a log and wrap in plastic wrap, freeze for 10-15 minutes

  4. Without warming the dough too much, cut into slices

  5. Preheat oven to 350 F. Line a baking sheet with parchment paper

  6. Bake for 10-12 minutes until just starting to brown on the edges.

  7. Allow cookies to cool

  8. Enjoy!!
