If you can't tell, I have been obsessed with cranberry and orange lately... It is just an amazing combo, what can I say :)
1C Butter (softened)
½C Coconut sugar (any sugar works!)
1 teaspoon vanilla extract
1 tablespoon orange zest (zest from 2 oranges)
¼ teaspoon salt
2C flour (I used 1:1 gluten free baking flour)
½ cup dried cranberries, chopped
1/2C white Chocolate Chips
Cream the butter and sugar together using a mixer.
Add vanilla, orange zest, and salt and beat until incorporated. Add flour and cranberries and white chocolate chips beat until mixture forms into a dough.
Roll dough into a log and wrap in plastic wrap, freeze for 10-15 minutes
Without warming the dough too much, cut into slices
Preheat oven to 350 F. Line a baking sheet with parchment paper
Bake for 10-12 minutes until just starting to brown on the edges.
Allow cookies to cool
