I wanted something super easy that I could toss into a pot, let it simmer, get my housework done and then enjoy on the couch. I have made like probably 5 times since I made it. I am obsessed. It can be eaten on a salad, in a wrap, with corn chips or all by itself. My favourite way is over a bed of spinach, with sour cream, cheese and corn chips crushed on top (kinda like a taco salad..mmm)
Ingredients
1 package ground beef
1 can diced tomato
1 can black beans
1 bell pepper (diced)
2 small white onions (diced)
2 cloves of garlic (minced)
1 C rice
2.5 C broth of choice (use bone broth for an extra protein kick!)
2 tsp sea salt
1 tsp cayenne
1 tbsp chilli powder
1 tsp cumin
2 tsp garlic powder
2 tsp onion powder
Instructions
1. Brown the beef (doesn't need to be fully cooked, just crisp the outside for flavour!)
2. Toss the rest of the ingredients into the pan and simmer for 45 minutes!
This meal is PERFECT for meal prep and freezes really well :)
