Orange Cranberry Muffins

2C flour of choice 

2 teaspoons baking powder

Pinch of sea salt

1/2C grass fed butter OR coconut oil

3/4C coconut sugar

2 eggs

1/4C milk of choice

1 orange (juice and zest)

1/4C dried cranberries

1 tsp vanilla

2 tbsp coconut sugar for topping


1. Preheat oven to 375F

2. In a medium bowl, whisk together flour, baking powder and salt

3. In another bowl, beat together egg, butter and sugar; until fully combined

4. Add in the eggs, juice of one orange, orange zest and vanilla; mix well

5. Add in the dry mixture and combine well (It will be thick)

6. Fold in cranberries

7. Scoop batter into lined muffin tins

8. Sprinkle with sugar on top (They get crispy; highly recommend)

9. Bake for 30 minutes

10. Let them cool and enjoy!
