Even though we are home more than ever, the days don't seem to have anymore time in them... weird right?!?! For me, cooking on the weeknights is a time to slow down. Lately we have been putting the playlist on shuffle and cooking quick but yummy dinners every other night, it has been absolutely magical. We also like to slide in a quick card game after dinner before cleaning up and rushing to the TV. I think it is so special to find little routines in life (especially during these times) that allows you have something to look forward too. Below I am going to share some of the yummy but quick recipes that we have been eating on weeknights!
Turkey taco bowls
package of ground turkey
Taco seasoning of choice
Yellow pepper
Onion
Can of black beans
Guacamole
Salsa of choice
Cooked Rice
Lettuce
Cheese of choice
Pickled onions
Spicy lime coleslaw (coleslaw mix, chipotle seasoning, avocado, lime juice)
1. Sauté peppers, onions and beans together
2. Cook turkey and beans with taco seasoning
3. Cook rice
4. Make guacamole
5. Make spicy lime coleslaw
6. Combine ingredients for your very own taco bowl
Mango jalapeño turkey burgers
1 package ground turkey
1 mango
1 onion
2 small jalapeños
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1 egg
2 cloves of garlic
1. Sauté onion, garlic, jalapeño
2. Chop mango, add to the pan and sauté for a few minutes
3. Add all ingredients to a bowl and form burgers
4. Cook and top the way you desire! I did cilantro lime dressing and avocado!
Easy Weeknight Chilli
1 large white onion
1 lb ground beef (chicken or turkey work too)
1 tbsp oil (Avocado or olive)
1 can black beans
2 cups chopped spinach
1 can crushed tomatoes
2 fresh tomatoes
2 cloves of garlic
2 tbsp chilli powder
2 tsp salt
1/2 tsp pepper
1/2 tsp cayenne
1. In a big sauce pan brown the garlic and onion in oil
2. Add beef until brown
3. Add all other ingredients and simmer (The longer the better)
4. DIVE IN.. but don’t burn your tongue 👅
And of course I ALWAYS finish my night off with a midday squares!
