This takes 30 minutes start to finish.. the perfect weeknight meal.
1 package ground beef
1 small white onion
1C chopped spinach
1 red pepper
1 tbsp olive oil
1 inch piece of fresh ginger
3 cloves garlic
3 tbsp honey
4 tbsp soy sauce or coconut aminos
1 tsp red pepper flakes
1 tsp hot sauce
Green onions for topping
In a sauce pan add olive oil, finely minced garlic and ginger; saute for 3 minutes
Add onion and red pepper; saute for five minutes
Add ground beef and brown for 5 minutes
Add spinach and the rest of ingredients
Simmer for 5-10 minutes
Enjoy with rice and sprinkle with fresh green onions!
