Sweet potato pumpkin soup

HELLO FALL! So ready to indulge in all the warm foods as the weather gets a little bit colder. This soup is gluten free, dairy free and vegan! But don't let that fool you.... it is TASTY.



Ingredients


2 sweet potatoes (skin removed and mashed)

1 can pumpkin puree

3 cloves of garlic (minced)

1 small red onion (diced)

1 can of coconut cream

1 cup broth

3 tsp sea salt

1 tsp onion powder

1 tbsp cinnamon

1 tsp nutmeg

2 tbsp olive oil













Instructions

1. Peel and microwave your sweet potato

2. Sauté onion and garlic with 2 tbsp olive oil

3. Add the rest of the ingredients and simmer for 20 - 30 minutes

4. At this point you can choose to blend your soup if you want it smooth and creamy or leave it!
