Such a fun and simple dinner idea! Mussels are a great source of protein and omega 3’s. We love to bake a fresh loaf of sourdough and enjoy with our mussels that night!
3lbs Fresh mussels
2C bone broth
1/2C white wine
1/2C cream
1 red pepper
2 shallots
4 cloves of garlic
3 tsp sea salt
2 tsp red pepper flakes
3 tbsp butter
1C chopped spinach
3 tbsp chopped fresh parsley
1 lemon
1.In a pot add butter, shallots, garlic, red pepper flakes, spinach; saute for 6 minutes
2.Add lemon juice, bone broth, salt; bring to a simmer
3.Add your mussels and steam for 12 minutes
4.Add your cream, and fresh parsley; simmer for 2 more minutes
5.Serve with fresh bread
