Gluten free pumpkin loaf with white chocolate cream cheese frosting










Okay hold on a minute... close your eyes and imagine this. The creaminess of cream cheese icing, the taste of white chocolate and the perfect taste of a pumpkin spice loaf. This recipe is AMAZING.







Loaf

2C gluten free flour

2 tsp baking powder

2 tsp cinnamon

1C pumpkin puree

3 eggs

2 tsp pumpkin spice

1/2C coconut sugar

1/4C maple syrup

1/2C melted coconut oil



Frosting

1/2C cream cheese

1/4C melted white chocolate

1/4C maple syrup

1 tsp vanilla












Directions

  1. Preheat oven to 375F

  2. Mix together loaf batter and pour into a lined loaf pan

  3. Bake for 40-45 minutes

  4. Mix together frosting

  5. Once the loaf is completely cooled; add the frosting and store in the fridge!
