Pineapple Ginger Chicken Bowls

This may be one of my favourite things I have ever made.. it is fresh, packed full of nutrients and tastes AMAZING!

6 chicken thighs (cubed)

1/2C pineapple (cubed)

2 tsp fresh ginger (minced)

1 clove of garlic (minced)

1/3C barbecue sauce

1 white onion (sliced)

1 tsp sea salt

1 red bell pepper (sliced)

Cooked rice


  1. Preheat oven to 450F

  2. In a bowl, mix together all ingredients and coat well

  3. Spread evenly on a baking sheet

  4. Bake for 25 - 30 minutes

  5. Add mixture over rice, fresh avocado and drizzle remaining gravy onto your rice
