This may be one of my favourite things I have ever made.. it is fresh, packed full of nutrients and tastes AMAZING!
6 chicken thighs (cubed)
1/2C pineapple (cubed)
2 tsp fresh ginger (minced)
1 clove of garlic (minced)
1/3C barbecue sauce
1 white onion (sliced)
1 tsp sea salt
1 red bell pepper (sliced)
Cooked rice
Avocado
Preheat oven to 450F
In a bowl, mix together all ingredients and coat well
Spread evenly on a baking sheet
Bake for 25 - 30 minutes
Add mixture over rice, fresh avocado and drizzle remaining gravy onto your rice
